We had a friendly competition at work to make the best fish soup, and this didn’t win, because the judge didn’t like cream. However I do like cream, so I will definitely make this again :)
Boil until the potatoes are almost done:
4-6 potatoes, peeled and chopped
1 small celery root, peeled and chopped
Fish or vegetable stock 0.5-1 dl white wine, Riesling or Sancerre, semi dry
3 dl cream salt and pepper to taste
Turn the heat down to a minimum and add:
1 filet of salmon, chopped
1 filet of cod, chopped
1 small fennel bulb, thinly sliced
Add just before serving:
1-2 dl of raw shrimp or scampi (optional)
Serve with fresh chili and decorate with a piece of dill.
