I made a pretty cake for my husbands birthday the other day. I have some fondant that is running out of use, so I decided to make some flowers. That, together with some fresh berries :)
The icing was AMAZING and the taste of the cake really lovely, but to be honest, the cake was a bit dry. Will try with less flour next time, and possibly an egg or two. It’s also possible I should only have baked it for 40 minutes, so stay posted for updates !
Mix together:
1 ½ cup sugar
1 ½ cup greek yoghurt
Add and mix:
The zest of 3 oranges
Add and mix:
¾ cups (185g) butter, melted
Add and mix:
3 cups gluten free flour
3 tsp baking powder
1 ½ tsp baking soda
Add and mix gradually:
The juice of 3 oranges
(Optional)
A couple of splashes of cointreau, angustora or orange bitters
Bake devided into 2 containers at 200C for about 1 hour
Cream together:
100g softened butter
Juice and zest from 1 lime
350g icing sugar
Enough to crumb coat the cake above
Update:
I took a stab at making it more moist, and yes, it worked really well, but sorry, there’s now an egg in it. The glass is half full.
