This is soooo lovely on toast, on potatoes or as an accessory to meat.
Velvety, sweet, salt, sour AND umami.
Heat up in a pan or in the microwave until the sausage is cooked:
100 gr butter
2 tbsp N'duja
Pour into a bowl standing in icewater
Add:
½ tsp paprika
100 gr cold butter
Stir until the butter has melted
Add and stir once in a while until butter is cold and starts to look lighter from the air that you whipped into it:
1 tsp lime juice
2 tbsp maple sirup
0 -½ tsp salt
a splash of olive oil
