Lemon mini muffin

Lemon mini muffin

Cream together:

50gr butter
0,5 dl sugar

Add and mix:
1 egg

Stir together and add:
2 dl gluten free flour
1 tsp baking powder

Also add then mix:
The juice and zest of 1 lemon

Bake at 200C for about 10-15 minutes or until baked through

Optional:
Frost with a mixture of lemon juice and confectionery sugar
