“Pannbiff” lunch

“Pannbiff” lunch

In sweden we have, as maybe you are aware of, the meatballs. But the meatball has a less famous cousin called the pannbiff, that is basically just a larger, flatter version. It has the same ingredients as the meatnall, the onions, maybe a dash of cream, salt and pepper and if you like some garlic too. I usually add just a touch of cinnamon also, if it’s not too prominent it gives a little je ne sais qoui. Also it’s customary too add a bit of flour or breadcrumbs, but I’m going for the gluten free option by using oatmeal instead. The rest of the lunch consists of boiled potatoes, lingonberry jam, cauliflowers and not the cream sauce since my kids where a bit skeptical. Also what appears to be yoghurt covered raisins, red currants and half a checkered apple. All in all not a bad lunch.
