Gluten free marzipan cake (Swedish Mazarin)

This is sooo lovely and a clear sign that I’m turning old. To my knowledge only old people eat this cake.
But I don’t even care.
It was worth it.

Gluten free marzipan cake

Cake
2 dl gluten free flour mix
2 tbsp sugar
75 gr butter
1 egg yolk
1 tbsp water

Filling
150 gr marzipan
1 egg
2 tbsp butter
½ dl gluten free flour mix
1 ml baking powder

Add all the ingredients for the cake in a mixer
Run until thoroughly mixed, let rest in fridge
Cut the marzipan in pieces, add all the ingredients for the filling in the mixer and run until thoroughly mixed
Use sturdy muffin molds, coat with oil or melted butter
Take a small portion of the cake dough and press into the bottom and sides of each cavity
Add filling to the middle.
Bake at 200C for about 15-20 minutes
Let cool and carefully remove the cakes
Add a tablespoonful of icing on each

Lemon icing
4tbsp confectionery sugar
2tsp lemon juice
Mix together with a spoon, use presently.
